A Lighter Delicacy — Transforming Wasted Bird Feathers Into Food



A lighter delicacy is a project by Thai designer Sorawut Kittibanthorn that seeks to highlight the inefficiencies of our current food system, from its production methods to the way ingredients are being consumed.

Feathers have long been a mere by-product of the chicken farming process, but Kittibanthorn seeks to challenge people’s perception on chicken feathers as an edible ingredient by exploiting its full nutritional potential to convert ‘waste’ into resource. “I believe that if we are to continue rearing and slaughtering millions of birds daily, then at the very least we have a responsibility to ensure that we safely and sustainably make use of every part of them,” the designer says. By extracting the feathers essential proteins, Kittibanthorn has developed a new ‘melt-in-the-mouth’ food product that is safe to consume, light in calories and provides us with the essential amino acids we require in daily life.
